How to keep open wine bottles?

Once a bottle of wine is opened, it is not guaranteed that it will be finished. And once bought it doesn't mean it will be consumed immediately. Here is the most classic of thorns in the side of the wine enthusiast: how to keep open wine bottles? Where to put the bottles to drink later.

Where to put the closed bottles?
In the absence of a "classic" cellar with ideal conditions (temperature at 14º, up to 16º/18º for reds - humidity at 80%), the ideal solution is certainly a refrigerated cellar, as can now be found very easily on the market. The best ones are those with double adjustable temperatures so you can separate an area for the reds higher up and one for the whites lower down which have different temperatures between them. In any case, sudden changes in temperature, hot, small and closed closets and exposure to light must be absolutely avoided.

And the open bottle?
The best solution is to recork the bottle, extract the oxygen with a special closure or, failing that, with its cork. If you have a wine cellar you need to store it at 14º, up to 16º/18º for reds to maintain quality. Be careful with the refrigerator, the temperature is too cold; if you use it, you will need to remove the bottle at least half an hour before consumption.

What aspects to take into consideration?
Broadly speaking, there are mainly 6 aspects of wine conservation, in professional cellars as well as at home:

- The light, which must be absent.
- The exposure, to be avoided in the South, is the warmest.
- The temperature, as mentioned between 14º and up to 16º/18º for reds
- The humidity must be between 70% and 80%.
- Ventilation, constant.
- The vibrations, often underestimated, which must be absent.
